Sweet lentils are a delicious way to treat yourself to a protein-packed breakfast that can be easily customized to suit your constitution best.
1 cup red lentils
2 cups unsweetened coconut milk
1 1/2 cup water
2 tsp coconut sugar
1 tsp cinnamon
pinch of pink salt
1/2 cup pumpkin puree
1 tsp pumpkin pie spice
1 small apple chopped
1/2 tsp pure vanilla extract
1 tsp finely grated ginger
1/2 tsp ground cardamom
1/4 tsp turmeric
1/8 tsp freshly ground black pepper
Rinse the lentils well until the water runs clear. Place in a bowl, add water to cover, and let soak overnight for optimal digestion
Drain the lentils and place them in a large saucepan. Add coconut milk, water, sugar, cinnamon, salt, and the ingredients for your dosha.
Bring to a boil over medium-high heat. Once boiling, reduce heat and simmer uncovered for 20 minutes or until most of the liquid is absorbed.
Remove from heat and let sit for several minutes to continue to absorb liquid. Pour into a bowl and enjoy warm.
